Cobbler Cookies/Crockpot Pierogies

Perfect Peach Cobbler Cookies

INGREDIENTS

2 c. all-purpose flour

1/2 tsp. baking soda

1/2 tsp. salt

1/2 c. butter, room temperature

1/2 c. granulated sugar

1/2 c. brown sugar, packed

1 large egg

1 tsp vanilla extract

1 c. diced fresh peaches

1 tsp. ground cinnamon

Pinch of black pepper

Pinch of ground ginger

1/4 c. granulated sugar

PREPARATION

> Preheat oven to 350°F. Line baking sheet with parchment paper.

> In medium bowl, combine flour, baking soda, and salt. Set aside.

> In a large bowl, blend butter, sugar, and brown sugar.

> Add egg and vanilla, mixing until well combined.

> Gradually add dry ingredients to wet ingredients, until just combined.

> Fold in diced peaches. 

> Drop tablespoons of dough onto prepared baking sheet.

> In a small bowl, mix cinnamon and granulated sugar. Sprinkle mixture over
the cookie dough.

> Bake 12-15 minutes or until golden brown. Allow cookies to cool on baking
sheet for 5 minutes.

Note: I love peaches. I’ll never forget when one of the ladies from the Friendly Neighbors Club was talking about her first taste of the summer of a peach. It was completely endearing.

Crockpot Pierogies

INGREDIENTS

3 packages cheddar pierogies

4 c. of chicken broth

1 8-oz. block of cream cheese

1 c. of shredded cheddar cheese

1 lb. sliced kielbasa

Salt and pepper to taste

PREPARATION

> Combine 3 c. broth with pierogies, kielbasa, and cheese in crockpot.

> Set crockpot on high 3-4 hours, then on low for 6 hours, allowing flavors to blend.

Cream Cheese Mixture:

> About 30 minutes before pierogies stop cooking, warm cream cheese with remaining cup of broth on a microwave or stovetop. Whisk until smooth.

> Pour mixture into crockpot, stir well.

> Sprinkle remaining cheese over top. Cover on low for another 30 minutes, allowing cheese to melt and qualities to dance together.

> May serve hot with sliced green onions as garnish.

Note: Pierogies make me think of my sister, Laurel Blackstone, who often invites me to try something new when I visit her home. “You’ve never had pierogies? What?” or some such thing is a common phrase. And it’s followed by a new culinary delight.
